Disappearing unit?
No, not one of mine.

At war with Germany (ye gods, Bismarck is IRRITATING) and they land one cavalry on my main continent. I saw this happen during the AI turns. When it got to my turn I went back to the area and the cavalry wasn't there. The caravel it landed from was but no cavalry.

I can't imagine Bismarck disbanded it so I can only think that he ran out of money and it was forcibly disbanded because he could not support it.

I'm surprised to see the AI can mismanage its money.

The cavalry might have moved from the landing point.

Can any units do this move once they have landed? Don't think so but not sure and too lazy to check at the moment.

Moving from the transport to land eats up all the unit's movement points, unless you're unloading a transport in a friendly city.

It wasn't a forced disbanding due to lack of funds. This happens at the start of a turn before movement.

But does it happen at the start of each individual civ's movement or, as with everything else, does it happen to all civs in turn, before the first civ (player) begins his movement?

Is Bismarck at war with anyone else who might have killed the Cav and moved on or gone back?

Nope, it just disappeared. There is nowhere it could have gone and the Germans were not at war with anyone else.

Sounds like a buggy chess program I used to have. If you were about to checkmate it, it would mysteriously make the offending piece "disappear"
