Whats a Philly cheese-steak?
no really? what is it? I cook some steak and cheese, put it on a roll, and, by virtue of me being in philly, it's a philly cheese-steak. correct?

Nope. It's just a cheesesteak then. You have to live somewhere else and think you're cooking it philly style for it to be a philly cheesesteak.

next thing he will say is he doesn't know who Dr. J is.
actually he probably doesn't know that. He's too young, or I'm too old.
Get to know your town Speer. You live in a city with a history. Unlike myself. My city is less than 100 years old. It really has no history. Just an old railroad town.
Philly has a very vibrant history- esp. in the 18th century.

To be serious, one of the hallmarks of a 'Philly' Cheesesteak is that the cheese is Cheese Wiz.

Yes, you doubt that's true, so that makes it so

real philly cheesesteaks are made in philly.
kinda like chicago dogs, or chicago deep dish. you *can* have it in other places, but the aura of the city isn't embedded in the cuisine, so it doesn't taste as good.

Cheez Wiz?! Commie
A good one has american or swiss. Plus you have to have onions and bell peppers mixed in with the meat.
That's authentic.
