Conversions
Is there a trick I am missing with Cultural conversions? It seems that I can build a city with a lot of culture producing buildings, near my capital and still not capture a opponent city with a 1 square radius that is far from their capital. Is there some way to encourage conversion? My cities rarely defect either: it is a phenomenon that I really don't see happening too much.

The chance for a city to flip is governed very much by your absolute cultures (ie total civ cultures) not so much by individual city cultures.
