There is another view on this. He left because he was a Ringbearer. You will notice that in the appendix the Tale of Years hints that Sam may have left Middle Earth as well, because he was the last surviving ringbearer.
I guess the idea is that bearing the ring changes a person such that they are "magical". Since the whole story of Lord of the Rings is based around the idea of magic and elvishness leaving the earth, presumably he leaves for Valinor where such things are appropriate. Once a person has been "magicked up" they no longer fit into Middle Earth which has by the fourth age, become the realm of men. For example, Aragorn is the last of the Numenoreans, the Edain, the elf-friends. These were men who associated with the elves to such a degree that the magic rubbed off on them, leading to a longer life and a higher form of culture. Of course, it's doomed, because elves were never supposed to stay in Middle Earth, and those that did either failed to obey instructions or were rebels who left and were exiled.
Gimli is supposed to go as well. I'm not quite sure what that means.

Well, Isildur struck him down, but Sauron had been defeated once before when Numenor was swallowed up in the Valar's wrath after the forces of Ar-Pharazon (IIRC) landed in Valinor. So I'd go with the Valar...
I think Elendil got a crack at him before Isildur as well, but I don't remember the timeline exactly.

Nope. Ar-Pharazon takes him back in bondage to Numenor before any of those things happen. Sauron admits defeat without a sword being drawn once he sees the might of Ar-Pharazon's army.
And Isildur does not strike him down AFAIK. He is slain by Gil Galad and Elendil and Isildur cuts the ring off the defeated Sauron.
It's not clear how that fight goes although only Isildur, Cirdan and Elrond stand by. Gil Galad is killed by Sauron's fiery grasp.
