Does the AI attack to steal your gold?
I've had games when it seemed that I was attacked because I had a lot of money. Has anyone else noticed this or am I imagining things?

They attack if they demand money and you say no, is that what you mean. They do not always attack under those condition, but it is common.
Ultimately they attack because they must. Sooner if you are percieved as weak. They attacked me and I only has 21 gold and they want it. I did not check on my advisor, but I may have been weaker, but I was too strong for them. Archers and spears coming after Swords/archers/horsemen and AC. Not a good plan.

No You are attacked because:
1. You have a lot of money and have a sub par military
2. You don't have a lot of money and have a moderate military
3. You have built a lot of wonders, ect.
4.. You are a resource hog
5. There hasn't been a war in 3 turns, and they need to kick off a good one.
6. You tell every one to "go bugger off...I'm busy running my empire"

Before Conquests, I was usually attacked when they made a demand and I told them to take a hike. Now, it seems to me that the AI attacks more often without any kind of demand. Not very nice!

Almost always this one in C3C, it seems. Looks like the AI wants to ***** purely for the sake of it. Already I've seen the suicidal warrior vs knight and impi vs spearmen Shaka, crazy Aztecs in CQ6 (even though they knew fine well I could nail 'em to the wall...) and they seem even LESS able than ever before to keep an alliance to 20 turns :P
Personally, it gives me the excuse I need to execute the lot of them.
(HA, like -I- ever needed one of those )
While it won't chase for gold, it WILL chase anything not nailed down. And even once you HAVE nailed it down, the AI seems determined to start it's war anyway

My favorite is the propensity to declare war on me from another contient, but no means to reach me. No tech to cross ocean tiles, but they declare war anyway?

I'd do the same if I was approached by someone to declare war on someone else on another continent who has no way of reaching me in exchange for gold, techs, or whatever. I'd do it. It's profitable.
I like how in C3C the AI is far more opportunistic and will join in the feast against a battered civ without agreeing to a MA with any of the warring parties when it sees an opportunity to grab a peice of the aciton.

Yes but this was a case of they demanded something and I refused. Then they declare war? This just causes them stress for no gain. Then they come along a few times wanting peace if I give them something.
Eventually they get the tech and send about 12 units of knight/bowmen/muskets to die. Now they see the merits of peace on my terms.

I'm not so nice, I get the neighbours to beat up on them too
Doesn't always work - sometimes they get away unscathed. And it involves you longer than you'd like. Still, revenge is sweet

The advantages of having lotsofmoney/techlead/resources/luxuries/coolnastybabes: you can drag a lot of friends to war, specially when it is occurring on another continent far, far away.

It does seem the AI is a bit more trigger happy these days. Maybe its just my games.

even with AI aggression set to lowest the friggin GREEKS sneak "rop-raped" me (if you call attacking a 3x elite Ancient Cav army with two Hoplites and an Archer "rop-rape" ), cutting my resource deals with them and depriving me of two out of six luxuries so I took sparta and their wines, then demanded spices for peace.
On that note, SoZ is a builder's best friend - no need to build a military. They are good defenders, and with one every five turns, I fought a war with the Persians for quite a while without building any units. We were seperated by the Byzantines, so all their units were funneled into a nice open killzone

They don't attack to get your gold. But they might get your gold if they attack and capture one of your cities. It's a gamble. I think that some of the AI civs, however, should attend Gamblers Anonymous--that way they can still gamble, they just use a different name!
