Demographics: Family Size
There is one that is close to accurate posted somewhere, the scrolls maybe, but I'm pretty sure this one is correct.
(Food Surplus * 4) / (Population + 1) + 2 = Family size
Food Surplus is the total of all unconsumed food in all of a civilization’s cities.
Population is the total of all city sizes.

Not that we were racing, but I was surprised to see your post when I was about to post the exact same topic!
I don't really have time to spend racing, I work on them at my leisure in between (and during) games of civ2 and work (IOW, I'm sure you'll beat me to all of them so I'm making excuses ). I've been working on most of them, but I think the relationships are more complicated for the ones that remain (except for productivity which seems to be just like that for military service except using food+shields+arrows instead of units, though in about 2% of my games it's off by 1 so I think I'm missing something).

Off by 1 in 2% of your games is pretty darn close! Why don't you post your formula and let the civ stratagy gurus help you find the missing link?

So actually the family size would be a point where you can check you general hunger/surplus, right? I never used it before.

Yeah I'd figured its something like that, lots of farms enlarges family size when a cit is under 20 in size.
