With regards to breeding horses. Although it is true that people bred horses very quickly, I think in terms of gameplay and the resource model, it is better to treat horses as a special resource which means they have to be traded for. I suppose the Native Americans would have had to do the same from Europe to begin with, but it will just work better if they are a tradeable commodity...
