Iroquois Leader
I don't know whether this has been mentioned before but the Iroquios leader is Hiawatha. This is shown in a screenshot in the Australian magazine PC PowerPlay. The picture is a diplomacy screen With a negotiation between America and the Iroquios. Down the bottom of the screen are two boxes, titled Hiawatha offers and Hiawatha wants.

It must be a display of ignorance on my part, but when asked who I would like to see as the Iroquios leader, I couldn't think of anyone.
Can someone give a few names of other Iroquois leaders whom we should/might have heard of.
Same within the Zulus, other than Shaka who else is there?

Iroquois leader
Ely Parker is another choice. Hiawatha is the best and most obvious pick, as he is the best known, but Parker was distinguished in his own right. He was a lawyer (though not allowed to practice in New York state) and led the Bureau of Indian Affairs under President Grant. He used his various positions in the white man's world to help the natives. I do not know how he is perceived by his own people, but he did exercise some influence.
Sorry, I can't help you with the Zulus. All I know about them is that Shaka was one of their leaders, they fought Michael Caine in a movie and the Zulu harald in civ 2 was a hottie!
As you can tell, I am a man of deep intelligence and philosophy

Ely Parker sounds like a member of the Wild Bunch.

Ely Parker
Lol@ Wild Bunch. Ely Parker and the Sundance Kid.
Oddly enough, Iroquois women selected who their male leaders would be. The women controlled who was appointed to a position (Sachems, I believe, were the leaders of individual villages/tribes and one of those leaders was appointed head over the rest). I would compare this to the authority our wives exercise over us now
It is ironic that the Iroquois women had such power but there are none among them (that I know of) to use in the game.
BTW, before anyone else uses the joke, Ely Parker would be an advantageous leader for the Iroquois, what with him inventing the cotton gin and all.

Uh, that was Eli Whitney. If it was supposed to be a joke, it wasn't funny.
