I've seen that in the luxuries of a city, I believe it is a Mink from your screen, but it looked like a squirrel in the city.
The attachment is there for update purpose.
Edit: The attachment changed to better pic.

The first one I believe to be incense, and the last one a Knight And I name Elephant Ivory, as that name has been used in the game and it is confirmed that it is a luxury, and that Elephants don't need resources.

The purple looks like wine, I think that the elephant is Ivory, and the deer, and cow, probably go under bonus food tiles.
Also, Gramphos, you should put those pictures in the orginal thread at the top. Update it again!!!

I think your Stoat or ferret is a Bison, and the gems are definitely a mounted unit of some sort.
Damn these web altered, resized, blurs.

How are whales a luxury resource? IMHO, they should be food bonus.

Here is wine. Looks like a fairly common luxury since it only has one happy face.

and a food and trade bonus too.
It probably will only be a bonus resource in civ 3 since we have yet to see it in the trade advisor or city screens.

Here are two that have already been posted. The first one is unknown, the second one is silk. They both seem to be moderately rare.
Gramphos, you're probably right about that being diamonds. The black thing in the center sorta confused me.
