The undelayable pleasure of cultural victory
I'm happy with the many ways of winning a CivIII game, but for a single idea that makes me uneasy:
if I amass 50000 cultural points and nobody else is half of it, I win.
If one of my cities amasses 20000 CP, I win.
Wait! I did not want to win just now! I want to raise my score a littel higher! I want to erase the Aztecs before winning!
So what? Could it be that when I meet CP victory conditions, I may choose wether to win or not?

Your best bet then is probably to disable 'Victory by Culture'. I wouldn't count on there being a 'hold off on winning' pop-up.

There is (IIRC) going to be one of those "the game is completed, but if you wish to you may continue playing" popups like they had in Civ2.

The Civ 3 Site mentions that getting a cultural victory is more difficult than it sounds, so chances are you probably need to go out of your way to win via the cultural path

I am sure you will have to make an effort to build the cultural improvements and wonders as early as possible in the game, so as to generate the maximum amount of culture from these sources in the later ages. That would mean putting off all superfluous activities such as wars and needless exploration in lieu of building up the necessary culture generators.

They [the victories] can all be turned off with the exception of the game limit ( which isn't really winning, it's you playing so long that the game gets bored of keeping score. )
