I vote for the Teutonic knight, because I think, the earlier the better. And Germany were at that time (1200) really in a position where it could easily develop to a dominating European Empire - if they had solved their government problems (province leading aristocrats joined the pope against the Kaiser in many cases...)

I intentionally avoided an earlier GA when I played the Germans. I wanted one triggered with the Panzer. It paid off under Communism with mobilization.
An industrialized golden age is very powerful. Germany is the only civ with a good industrial/modern special unit. Coupled with militarism, the multiple attack capability of the Panzer assures leader production. Militarism also assures that the player will be able to stay in the game, and the scientific trait gives them a boost in research so they keep up in the tech race.

The vast majority of Cruisaders ("Kreuzritter") came from other countries, especially France and Britain. What would the German ones make so "unique"?

Do you actually believe what you're saying? It gives heck, just makes libraries and unis cheaper and gives you 3 extra techs over theg ame, that is next to not helpful at all tech-wise. cheap buildings help for cultural expansion though, and that extra tech gives you a nice economic boost at the beginning of each age
