Immortals aside -- and Persia do have the best UU -- they're not more dangerous than anyone else, I think.

But yeah, I agree it is important to crush the Persians as early as you can. A lightning strike against their sole iron deposit should put you in a nice position, weather their initial attack from the immortals they did manage to build, and then set about destroying their now-weakened civ.
