Right, the carpenter. He's in the little cave just to the SE, right? after I get down about 3 or 4 levels I end up in a room with four empty walls (no doors, etc.) and the staircase. nothing else...I've never once found the carpenter...

Look for secret doors. The mad carpenter Yrrigs is on the 7th level of the small village dungeon.
Hint: don't kill him. Try to cure him.
