The easiest way to help you would be to point you in the direction of the MP signup sheet. You will find a human opponent to be far more devious.
But if you want to continue playing SP, have a look at some of the challenges in Vel's Strat Guide. Heck. A couple of the most extreme ones, like the zero facilities challenge intimidates me so much I haven't even tried it.
Simpler still would be to just not play the conquest game. You can easily win without any AI bases. But if you enjoy fighting, you might want to try some of the scenarios set up by Googlie or the CGN challenges.
