Is it possible to add resource squares for grasslands?

No is correct, however, you can use the resource shield found in grasslands to add graphical niceities, which also will of course have the +1 shield.

You could use a different slot for 'grasslands', one with specials like you want. Then rename the old grassland slot to tundra/desert or some other useless terrain. Then you can use the little (grassland) shield for extra grapical tastiness there too.
