I beleave that If you set your civ as Random and atleast pick the civs that you want to play against and have the rest as Random, then you can't get the civs that are already set as your opponent.

I've noting against Vikings, it's just that I think Random gives more debth to the game. However, with a man-made map it can be good to have a specific race.
