Siphai, Rider, Samurai. In that order. These UUs come along after I have a built up a decent infrastructure and am comfortable with going to war, but not so late that the game has been well decided. And I am partial to fast moving offensive units.

Mounted Warrior, Immortal, Siphai.
Mounted Warriors are 2 move units with an attack of 3. When used correctly, they can pick a civ apart, early GA notwithstanding.
Immortals are... Immortals. A 4-attack unit so early in the game is mind-boggling. It's like having Siphais in the Medieval Age. Which leads me to...
Siphais: lots o' shields and a big punch behind those shields. No unit is so incredibly effective for so long as the Siphai. They can trample anyone in the Medieval Age, laugh at Riflemen and even match blows with Infantry. GA at an excellent time as well. Only things you have to worry about with the Ottomans is surviving until you can get Cavalry, and building up a large enough treasury to fund those expensive upgrades (Leo's is a great wonder for the Ottomans!).

Of all the ones I have tried - Mounted Warrior. Although I had a lot of fun with Panzers and F-15s.
I haven't tried Siphai (no play the world, but am trying them in current mod.) I also haven't tried any others except Legionary, MoW, Jaguar Warrior and Gallics (again via a mod).
I obviously haven't finished many games, so no-one take my word for it.

Numidian Merc, Mounted Warrior, Rider and Siphai
In terms of civ characteristics, I'd choose the Rider and Numidian, I am undecided as to which though.... probably Rider
Samurai also rocks, I HATE facing off against those buggers...

For SP, if I could pick any UU irrespective of civ traits, I think my preferences would be Mounted Warrior, then Ansar Warrior (same offensive punch as a Rider at a lower cost, albeit not as good on defense), and then Rider. Sipahi are absolutely awesome, but I like the head start on conquest that the earlier UUs provide.
Disclaimer: I'm not sure I've ever actually used Mounted Warriors in combat because I don't care much for the Iroquois trait combination. But I know what I can do with War Chariots, and MWs have the same offensive advantage relative to WCs that swordsmen do relative to archers (albeit not the same defensive benefit), with the same difference in cost. That, plus a little experience with Gallic Swordsmen (same attack but better defense) gives me a pretty good idea of what I could do with MWs if they came with an industrious and/or militaristic civ.

Samurai - their defence is really too good so they are very hard to stop, only cavalry have enough punch (and mobility) to deal with them. Mil/Religious is quite a good trait combo too.

Another favorite is Gallic Swordsman... great traits mixed with nice unit stats... And look, nobody they start near has a three defense! Even a ninny like me can use them!

The deadliest UU is definitely the Concerned Roommate, the Real Life's UU... it comes and uninstalls Civ from your computer and makes you go jogging or something else instead... used in conjunction with the Intruding Reality Trait and the Underlying Guilt and Feeling That You're Spending Too Much Time Playing Civ trait, this UU can truly upset the balance in the game...

Mounted Warriors are great, but the lack of Ind or Mil traits makes it harder to play as the Iro's for me.
I've never been a big fan of the Immortals, maybe I've just had bad luck getting Iron when I play as Persia, but they've never really done it for me.
I suppose my favourite is the Legion or the Samurai, partly for their strength, but also for flavour reasons.

Yeah, the Legion & Samurai are the coolest UUs.
I did forget to mention War Chariots, but Nathan's post reminded me. Unit for unit they aren't impressive, but their low cost allows you to build up a ridiculous horde and then lay waste to multiple civs. Or, alternatively, just build them for upgrade purposes. And of course, I love the Egyptian traits.v

The Legion and Immortals might be alright for smaller maps, but the larger you get the more irritating these units become, IMO.
