The Wonder of Hex Editing
Is it possible to hex edit a save game so that more than one civ has the SAME wonder? Has anyone ever tried to do this?

I recall someone saying it was impossible (something about the location and the "wonder built" flag being stored in the same place I think), not sure though.

I don't think it's possible. The owning city/civilization is a property of the wonder, not the other way around. So there can never be more than one instance/owner of a wonder.

So there's just a single byte to store the info on what civ it is (0-7)?

No, just what the wonder's location is.
edit: sorry that was too imprecise: the byte is the index number of the city where the wonder is.
