I have no problem leaving railroads out as they present the possibility of allowing the first one to attain them a rapid unlimited movement rush over everyone else if they have enough workers.

If you guys are looking to play a Medieval game, there is an amazing mod called MEM (Medieval European Mod) that I play with. I would recommend you use it as a base for your mod perhaps, as it is already in a complete form. You can find it here.
BTW, I would be interested in playing.

No, it is a complete mod. Complete with custom units, tech tree, improvements, wonders, etc..

I am installing Conquests now. I've heard there are issues with the new way the Palace and Forbidden Palace handle corruption though.

I won't have Conquests for a couple of days yet.
Issues about corruption seems to be putting it mildly! I will reserve judgement until I have had a chance to play a SP game though.

Well, chances are very good that you won't be building a 100-city empire in the Middle Ages scenario so whatever issues you've heard about corruption should be somewhat muted in our case, I imagine.
Looks like there are three U.S. players in the player list. Is it possible to choose the order in which the players take their turns? If we begin the game tomorrow, we (U.S. players) could have our first turn movements out of the way just in time for European c3c release date.....

Go ahead and buy it, the new features and options add a lot of new game elements. The Age of Discovery Scenario was fun and corruption was very similiar to the Naval PBEM so it is adjustable.

Those are the eight civs in the MP Middle Ages Scenario. You can only have eight civilizations in MP and those were the eight they left in the MP Scenario that comes with Conquests.
